SEASONING
The loin is then placed to mature in well-ventilated rooms for an optimal period of about three to four months.

The whole piece is about 3 to 4 kg.
INFORMATION
LOMBO or “LONZINO” OF WHITE PIG comes from the noble portion of boneless pork arista meat.
The piece is salted in a tanning mixture of Tuscan salt and spices for several days.
Once the piece is removed from marinating, it is stuffed into natural gut, and then wrapped in elastic twine netting and tied with red twine and placed for seasoning.
Loin has a clear distinction of the lean part from the fatty part.
It is characterized by a very mild and slightly spicy flavor.
A claw of fatty part is present, mellowing the flavor.
