INFORMATION
The CASENTINO GREY Pork PORCHET TRONCHETTO, uses the belly, tenderloin and liver parts.
Once the pieces are chosen, a seasoning mix is made including salt, pepper, and other spices including fennel.
The meats are massaged with the seasoning, and then the bacon is rolled and tied, leaving the tenderloin and liver parts inside.
When cooked, the outside of the skin takes on a crispy texture.
Crispy on the outside and soft on the inside due to the juices of the meat, this cooked dish enhances the exceptional quality of the raw material, with a sling-like fragrance.
