Sbriciolona of Casentino gray pork
Sbriciolona, is a very fresh salami made from fennel. Fennel seed and flowering gives a special delicacy to the product.
Genuine Casentino ham has branded on the rind the “CONSORZIO DEL PROSCIUTTO CASENTINO” seal.
SEASONING
The salamis are tied with white twine in the traditional way and placed to mature in temperature- and humidity-controlled cells for about 20 days.

The average size is around 1.5/2 kg.
INFORMATION
SBRICIOLONA DI SUINO GRIGIO DEL CASENTINO, follows the same procedure as RUFFIANA, with the only difference being a shorter maturation period.
It is obtained by carefully selecting prime cuts including shoulder meat.
Once the meats are chosen, they are seasoned with Cervia salt, pepper, and then ground with medium grain.
Fennel in seed and flower is also added.
The meats are then stuffed into natural casings about 10/12 cm in diameter and placed for curing.
Sbriciolona, while following the Tuscan tradition, adds a delicate flavor by using fennel blossom.
