SEASONING
The salamis are tied with green twine in the traditional way and placed to mature in temperature- and humidity-controlled cells for about 60 days.

SALAME TOSCANO DI SUINO GRIGIO DEL CASENTINO (TUSCAN GREY PIGS SALAMI FROM CASENTINO) is made by carefully selecting prime cuts including shoulder meat.
Once the meats are chosen, they are seasoned with Cervia salt, pepper, and a pinch of chili pepper and then ground with medium grain.
Lard obtained from the animal’s back and black pepper in
grains.
The meats are then stuffed into natural casings about 9/10 cm in diameter and placed for curing.
Tuscan Salami follows local tradition with intense, bold flavors.
