INFORMATION
MORTADELLA DI SUINO GRIGIO DEL CASENTINO is obtained by carefully selecting cuts of belly and shoulder meat.
Once the meats are chosen, they are seasoned with salt, pepper, herbs and mixed spices, then ground twice with very fine grain.
Internal pistachios and knife-cut lardels obtained from the lard of the animal’s back are added.
The meat is then stuffed into synthetic bag about 20 cm in diameter. La

Mortadella differs in its leanness, grinding grain and resulting texture on the palate: the spicing enhances the value of the meat.
