Loin is placed to mature in well-ventilated rooms for an optimal period of about three to four months.

The whole piece is about 3 to 4 kg.
INFORMATION
LOMBO or “LONZINO” DI SUINO “CINTA SENESE DOP” comes from the noble portion of boneless pork arista meat.
The piece is salted in a tanning mixture of Tuscan salt and spices for several days.
Once removed from marinating, the piece is stuffed into natural casing, tied with green twine and then wrapped in elastic twine net.
Loin has a clear distinction of the lean part from the fatty part.
It is characterized by a mild and slightly spicy flavor. The firmness of the meat is balanced by the thinness of the fatty part.
