SEASONING
Rolled Pancetta, distinguished by green twine, is placed to mature in well-ventilated rooms for an optimal period of about three to four months.

The whole piece is about 3/4.5 kg.
INFORMATION
Pork PANCETTA ARROTOLATA DI SUINO “CINTA SENESE DOP” is obtained from the belly of the pig properly trimmed.
The piece is salted in a tanning mixture of Tuscan salt and spices for several days.
Once removed from the marinade, rolled up, stuffed into a natural casing, and hand-tied, the Rolled Pancetta is placed for seasoning.
Rolling the piece, allows for a soft and hydrated texture while still maintaining the characteristics of bacon and adding intense flavors given by the spices.
Available in aromatic fennel or chili pepper versions.
