INFORMATION
LARDO DI SUINO “CINTA SENESE DOP” is made from the subcutaneous fatty tissue found in the pig’s back.
The piece is marinated with a curing mixture of Cervia whole grain salt and a beaten spice.
Marinating takes place in special containers in which the lard is compressed.
At the end of marinating, the product is washed, dried, and fresh rosemary is sprinkled on top.
The lard is melt-in-the-mouth but with good texture that allows for a perfect cut, and on the palate it creates an explosion of scents reminiscent of forest scents.
THE NATURALLY PROCESSED PRODUCT IS FREE OF DYES AND PRESERVATIVES.
