Casentino Grey Pig Gentle Salami
Salami with delicate flavors and very fragrant. Obtained from selected meats of the pig and stuffed into the gentle casing.
Genuine Casentino ham has branded on the rind the “CONSORZIO DEL PROSCIUTTO CASENTINO” seal.
SEASONING
The salamis are tied with string in the traditional way and placed to mature in temperature- and humidity-controlled cells for about 60 days.

The average size is around 800 grams.
INFORMATION
SALAME GENTILE is made by carefully selecting prime cuts including shoulder meat and ham trimmings.
Once the meats are chosen, they are seasoned with Cervia salt and pepper and then ground to medium-small grain.
The meats are then stuffed into natural gentle casings, which, being fatty, gives the meat more moisture even during curing.
The salamis are then tied with twine in the traditional way and placed for curing.
The thinness of the meat and the softness, and the delicacy of the flavors, are the distinguishing features of this type of sausage.
